5 Sentidos Single Batch Arroqueno Agave Spirit
This small, Colorado-only batch of Arroqueno is the first time Cinco Sentidos has bottled and exported an Arroqueno distilled by maestro Eleuterio “Tio Tello” Perez Ramos. Tio Tello traveled with his son Lalo to the village of La Estancia, Oaxaca, to harvest these cultivated agaves, some which were close to 20 years old. Tio Tello and Lalo trucked them back to their village of El Nanche, Oaxaca, where they roasted the hearts in an underground stone pit, using mesquite and a small amount of copal wood as firewood. The hearts roasted for approximately five days and were then allowed to rest for another five days before Lalo, along with friends and family, used wooden mallets and machetes to crush the cooled agave in order to create a fermentable mash. That mash was heaped into a single sabino cypress tank and was then allowed to dry-ferment for two days. Then Lalo added local well water to the mash, eventually permitting the mash to continue fermenting for an additional 12 days. After the mash was deemed fully fermented, Tio Tello and Lalo double distilled it in two pot copper pot stills at his Palenque producing 92 liters. The product was then glass aged for one year. Approximately 70 liters bottled for export to Colorado. The remaining liters remained in Oaxaca for local consumption.
